The lotus root is frequently used in Asian dishes and can be used in soups, deep-fried, stir-fried, or even pickled. They have a similar texture to that of a potato. Find some lotus root at your local Asian market and try out this recipe to complement your Pur~lisse Blue Lotus Collection skincare regimen:

Lotus Root Soup (recipe from Malaysian Chinese Kitchen)

Ingredients: 1 dried cuttlefish (squid)

1 lb pork neck bones or bone-in ribs

10 red dates, rinsed and soaked for 15 minutes

1 lb lotus root, peeled and cut to 1/4-1/8 inches thick slices

Salt to taste

Preparation: Dry cuttlefish with paper towel. Place on metal grating tray on a pan and place in broiler until fragrant. About 4-5 minutes. Set aside. Fill a large pot halfway with water. Bring to a boil and add pork necks or ribs. Blanch for 4-5 minutes and then remove with tongs and rinse in cold water. Discard water from pot, and fill with 8 cups of fresh water. Bring to a boil. Add blanched pork, dates, lotus, and cuttlefish and bring back to a boil. Reduce heat to low and allow to simmer for 1 1/2 to 2 hours. Skim off any scum that rises to the surface. Season with salt to taste and turn off heat. Serve warm in individual bowls.
